Sustainable Gastronomy Day : Gastronomy refers to a specific style of cooking from a particular region. It is celebrated on June 18 worldwide. It is known to be a study related to food and culture. The study also empowers people with nutritional facts, cooking techniques along with food science and many more.

The day got into effect as the United Nations General Assembly in a resolution adopted on December 21st, 2016 designated June 18 as Sustainable Gastronomy Day in its resolution A/RES/71/246. The day holds importance as UNESCO, FOA as well as UNGA along with various member states have collaborated with each other. They have the same ideology and it was to create awareness about their immense role for sustainable development.
The day is celebrated in order to bring the attention of the world regarding the pivotal role which sustainable gastronomy can actually play in sustainable development. The day is also important towards ensuring that cultures and civilizations offer an important phase towards sustainable development.
Gastronomy also symbolizes cultural expression and highlights diversity. Sustainable gastronomy involves various things such as the origination of ingredients, the method of growing food as well as the way it is transported to the market and then finally to homes.
One of the important highlights and considerations of gastronomy has been that it is able to promote consumption of sustainably produced local foods.
FAO has presented a sorry picture of how the food gets wasted or lost during production which when accounted annually amounts to 1.3 billion tons. So, technically speaking along with the food which is wasted, there are a series of associated resources in the form of water, feed and seeds, labor and money which equally goes down the drain.
Importance of observing International Days
The importance of observing any International Day is to sensitize the masses by empowering the public on the issue. This helps in mobilizing political will and resources for minimizing or eradicating the problem. Such a specific day also marks a beginning to celebrate the moment by reinforcing the belief in humanity.
What should be done?
There is a need to better strengthen the system associated with local producers, and their food products by creating a polished network and it is done through geographical indications (GIs). It is known to be a pathway for creating nutritious food systems so that the rural communities can get into the phase of sustainable development across the world. Hence, as we become more sustainable, we are able to minimize wasting our natural resources without adversely affecting the environment.
Hence, as we attain the term ‘Sustainability’ we make better use of the available resources in terms of fishing, agriculture etc for preparing the food where it is able to fulfill the thirst of hungry stomachs across the poorer section of the society. Gastronomy becomes a reason for celebrating the cultural diversity of the world by safeguarding wild life, nature along with cultural traditions of the world.
